Ingredients
6 tbsp cold butter
5–6 cups chopped rhubarb
¼ cup white sugar
1 tbsp orange juice
1 tsp orange zest
¾ cup brown sugar
½ cup all-purpose flour
½ tsp cinnamon
Pinch salt
½ cup rolled oats
½ cup chopped pecans
Instructions
Preheat oven to 375°F. Grease baking dish.
Toss rhubarb with white sugar, juice, and zest. Spread in dish.
Pulse butter, brown sugar, flour, cinnamon, salt. Add oats and pecans.
Crumble topping over rhubarb. Bake 45–50 minutes until golden.
Notes
- You can substitute chopped walnuts or almonds for the pecans
- For a gluten-free version use almond flour or a certified gluten-free flour blend
- Fresh strawberries can be mixed in with the rhubarb for a sweeter twist
