- 1 cup heavy cream, cold
- 2 tbsp powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- 1 ½ cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon zest

Instructions
- Preheat oven to 350°F and grease two 8-inch round cake pans
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt
- In a large bowl, beat sugar and butter until light and fluffy
- Add eggs one at a time, mixing well after each addition
- Stir in vanilla extract and lemon zest for added brightness
- Gradually add the dry ingredients, alternating with buttermilk, beginning and ending with flour mixture
- Divide batter evenly between pans and bake for 30–35 minutes until a toothpick comes out clean
- Cool cakes completely on a wire rack before decorating
- Whip heavy cream, powdered sugar, and vanilla until soft peaks form
- Spread whipped cream between layers and on top of the cake
- Decorate with fresh berries and mint leaves for a show-stopping Mother’s Day cake
- Chill for 15–20 minutes before serving for clean slices and best presentation
