Instructions

  1. Preheat oven to 350°F and grease two 8-inch round cake pans
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt
  3. In a large bowl, beat sugar and butter until light and fluffy
  4. Add eggs one at a time, mixing well after each addition
  5. Stir in vanilla extract and lemon zest for added brightness
  6. Gradually add the dry ingredients, alternating with buttermilk, beginning and ending with flour mixture
  7. Divide batter evenly between pans and bake for 30–35 minutes until a toothpick comes out clean
  8. Cool cakes completely on a wire rack before decorating
  9. Whip heavy cream, powdered sugar, and vanilla until soft peaks form
  10. Spread whipped cream between layers and on top of the cake
  11. Decorate with fresh berries and mint leaves for a show-stopping Mother’s Day cake
